The Meat Shear Cell is usually used to test meats and poultry for tenderness. Following the basic design features of the classical Warner-Bratzler method, the CW -1 cell consists of a base sample holder with a shear slot and a triangular cutout movable blade. The shear slot is 2-9/16 inches (65 mm) wide. The movable blade is approximately 1/8 inch (3.2 mm) thick and slides in a guide way on either end of the shear slot. The triangular cut in the blade is 1-1/4 inches (32 mm) wide at the base, 1-1/8 inches (29 mm) high, and has a 61 degree shear angle. The movable blade is attached to the load cell and the sample holder slides into the test cell holding area on the base of the instrument.
