TMS Perspex Knife Edge

The TMS Perspex Knife Edge is ideal for performing low force tests on soft foods such as nougat and mallow in order to assess their shear properties.

The "V" shaped edge compresses onto the sample before shearing through it to measure its cross-sectional properties.

A perspex blade is suitable for tests where it is important not to alter the temperature of the sample, for example, butter, in order to obtain accurate, reproducible results.

    * 60mm perspex knife edge

      Must be used in conjunction with:

          -TMS extension piece set (432-100)

          -TMS standard fixture table (432-243)

    * This fixture is only recommended for texture measurement applications below 250N.
